Tasting
Deep ruby in colour. The nose reveals ripe blackcurrant, blackberry and plum, complemented by subtle notes of cedar, vanilla and sweet spice. Full-bodied and concentrated, the palate is structured by firm, well-integrated tannins and balanced acidity. The finish is long and harmonious, with lingering dark-fruit and oak-spice nuances.
Food pairing
Ideal with grilled ribeye, herb-roasted lamb, slow-braised beef cheeks or wild-mushroom dishes. It also pairs well with mature hard cheeses, roasted root vegetables and rich lentil or aubergine-based dishes.
Winemaking
Fermentation took place in temperature-controlled stainless steel tanks at 25°C, with programmed pump-overs to ensure controlled extraction of colour, flavour and tannins. The wine was then matured for 12 months in American oak barrels, adding structure, aromatic complexity and a refined spicy character.
